Bacalao Asado con Patata Panadera y Cebolla Confitada

  • 1 cod loin of ½ kg
  • 1 potato
  • 1 onion
  • White wine
  • Oil
  • Salt

Place the cod on the griddle with the skin side up. Put the onion to confit with the olive oil and salt. Cut the potato into loaves and fry it. When the onion is confit and the potato is fried, place the potato in a mould, then the onion on top and finally the cod with the skin side up. Sprinkle everything with white wine and bake in the oven (180º) for 12 minutes.

In a shallow dish, place the potato and onion first, then the cod with the skin side up, pour a little parsley oil on top and sprinkle with parsley.
