Ceviche de pescado

Serves 4:

- Fillet of grouper
- Red onion
- Cilantro
- Chilli
- Salt and pepper
- Pepper
- Romaine lettuce
- Lime juice

Cut the raw fish fillet into small cubes and place in a bowl. Cut the onion into julienne strips, chop the chilli and coriander and add everything to the bowl. Season with salt and pepper and add the juice of 2 or 3 limes. Stir everything by hand so that the fish macerates and leave to stand for 5 minutes. Serve the fish on a bed of romaine lettuce and pour the maceration juice over it.
