Ensalada de bacalao con vinagreta de tomate

Serves 4:

  • Lettuce mix
  • 1 loin of cod
  • 2 boiled potatoes
  • Half an onion

For the vinaigrette

  • 2 ripe tomatoes
  • Oil
  • Vinegar
  • Salt

Fry the onion cut into julienne strips, add the cod cut into cubes and cook for 2 minutes.

Make a vinaigrette with two ripe, peeled tomatoes and mash. Add oil, vinegar and salt to taste.

Presentation: Place the lettuce with the diced potato on top, serve the onion confit with the cod and drizzle with the tomato vinaigrette.
