Ensalada de pollo escabechado con queso de cabra

Ingredients for four people:

- One piece of goat's cheese in curls
- Bouquet of lettuce
- 4 slices of ham
- 1 tomato
- Assorted peeled nuts (pine nuts, walnuts, sultanas, pistachios...)

For the marinade:

  • 1 red pepper
  • 1 green pepper
  • 3 carrots
  • 5 cloves of garlic
  • Bay leaf
  • Green pepper
  • 3/4 litre olive oil
  • 1/4 litre apple cider vinegar
  • 2 chicken breasts
  • Salt

For the dressing:

  • Goat cheese
  • Marinade

Chop the pickled vegetables and add the olive oil, vinegar and salt. Cook over a low heat for 40 minutes and then add the chicken breasts, leaving to cook for approximately 30 minutes more, as this will depend on the size and quality of the chicken.

Once the chicken is marinated and cold, fillet it as thinly as possible and set aside. Mix part of the marinade with the goat's cheese for the dressing.

Mix the lettuce bouquet with a handful of diced tomato and add the cheese dressing, then make portions to taste and cover with the slices of chicken that have been cut.

Finally, decorate with a slice of grilled cheese, a slice of fried ham and nuts.
