Fabada Asturiana
Ingredients
Ingredients (for 4 diners):
- 1/2 kilo of fabes de la granja (beans from the farm)
- 2 chorizo sausages
- 2 black puddings
- A piece of pork shoulder
- A piece of bacon
- A piece of meat (pig's trotter, ear, rib...)
Preparation
- Soak the beans in water the night before.
- To start cooking them, drain them, change the water until they are completely covered.
- Add the compango (the chorizo, black pudding, pork shoulder, bacon and meat) and leave to cook until the fabes are tender.
- During the cooking process, remove the foam as they are cooked.
- If the water is used up, add more, always cold. Add salt to taste.
- At the end, you can add a garlic and paprika stir-fry.
