Pote de berzas

  • 100 gr. of beans
  • 2 chorizo sausages
  • 2 black puddings
  • 200 gr. of bacon
  • 250 gr. of rabadal with bone
  • Cabbage
  • Potato
  • Garlic
  • Paprika

Soak the beans the night before. Boil the cabbage beforehand to take some of the strength out of it. Once boiled, chop them to taste.

Cook the beans with the compango for approximately two hours, depending on the hardness of the beans. Once cooked, add the vegetables, the "triscada" (i.e. broken when cut) potato, water and salt.

With the garlic and the paprika, we will make the refried sauce that we will incorporate, to leave the whole pot to cook until it is to our liking.

Si la berza es temprana, lo ideal es congelarla tras el primer hervor ya que romperemos las fibras y favoreceremos que a la hora de hacer el cocido la verdura quede más tierna.
