Sablé de Cabrales, cebolla y panceta con ensalada de setas

Ingredients

For 4 persons:

  • Sablé:
    • 200 gr. of flour
    • 100 gr. of Cabrales
    • 250 gr. Butter
    • 90 gr. Egg
  • 24 mushrooms
  • 200 gr. Sunflower oil
  • 1 clove of garlic
  • 1 bay leaf
  • 4 Onions
  • 4 thin strips of bacon
  • Lamb's lettuce
  • Arugula

Sablé: cream the butter with the cheese. Add the egg. Add the sifted flour and mix well. Set aside.

Mushrooms: Blanch the mushrooms and add them to the pan with the oil, garlic and bay leaf at 70ºC for 7 minutes. Set aside in the oil.

Poach the onion slowly.

Finish: Roll out the sablé dough. Place the poached onion on top. Place the bacon strips on top and bake in the oven at 180ºC for 7 minutes.

Assembly: Leave the tartlet at room temperature. Arrange the confit mushrooms, lamb's lettuce and rocket on top.
