Arroz con leche

- 100 g rice
- 1,200 cl milk
- 1 glass of water
- 2 cinnamon sticks
- 1 lemon rind
- 1 pinch of salt
- 50 gr. butter
- 180 gr. sugar

Put the water, cinnamon, lemon, salt and rice in a saucepan. Put everything over a low heat, stirring until the water is consumed.

Add half of the boiling milk and continue stirring. As it thickens, gradually add the rest of the milk.

When it is very thick, add the butter and sugar, paying maximum attention as this is the moment when it can stick more easily.

Turn off the heat, remove the cinnamon and lemon. Leave to rest, turning it from time to time.

The presentation will be with a dusting of cinnamon on top, or with sugar that we will re-burn with the "kitchen hook".
