The town of L' Entregu/El Entrego, in the council of San Martín del Rey Aurelio, is the world capital of Les Cebolles Rellenes, a brilliant culinary invention that has its origins in the ingenuity of a cook from this town, Aniceta Fueyo "la Nina", who in the 1940s devised it to feed several priests during Lent.
So, coinciding with the festivity of San Andrés, which is on 30 November, in L' Entregu/El Entrego they celebrate in style the Fiesta de Les Cebolles Rellenes (Stuffed Onions Festival). It must be said that the festival lasts several days, and that the popularity of this dish is such that it transcends local, Asturian and even Spanish borders.
Of course, the celebration includes a wide and varied cultural and leisure programme: a proclamation, musical performances, a culinary competition of 'cebolles rellenes' (stuffed onions), etc.
It is true that the original dish is stuffed onions with tuna, but with the passing of time and the desire to innovate, the recipe book has expanded and there are also onions stuffed with meat and even seafood. In short, onions are the star of a menu that is rounded off with tripe and, for dessert, casadielles.
Les Cebolles rellenes is one of the most classic, original and lively gastronomic festivals in Asturias.
