The town of L'Entregu/El Entrego, in the municipality of San Martín del Rey Aurelio, is the world capital of stuffed onions, a brilliant culinary invention that originated from the creativity of a cook from this village, Aniceta Fueyo "la Nina," who came up with it in the 1940s to feed several priests during Lent.
So, coinciding with the feast of Saint Andrew, which falls on November 30th, L'Entregu/El Entrego celebrates the Stuffed Onions Festival in a grand manner. It should be mentioned that the festival lasts for several days, and the popularity of this dish is such that it transcends local, Asturian, and even Spanish borders.
Of course, the celebration includes a wide and varied cultural and leisure program: opening speech, musical performances, a culinary contest of "stuffed onions," and more.
It is true that the original dish consists of onions stuffed with tuna, but over time and with a desire to innovate, the recipe has expanded, and there are now stuffed onions with meat and even seafood. Ultimately, onions take center stage in a menu that also includes tripe stew and, for dessert, casadielles.
