Chestnut Stew
Ingredients
Serves 4:
- 1/2 kilo of chestnuts
- 1/2 kilo of potatoes
- 2 chorizo sausages
- 2 black puddings
- A piece of pork shoulder
- A piece of bacon
- A piece of pork
- A few leaves of chopped vegetables (cabbage, cabbage, cabbage...)
- 1 sachet of saffron
Preparation
Cook the compango (the chorizo, black pudding, pork shoulder, bacon and pork meat) with the vegetables until the meat is almost tender.
Add the potatoes and chestnuts (previously cooked for 10 minutes) and cook until soft.
Add salt to taste. Optionally, you can add a little spicy paprika.
