Preparation
This pincho aims to reward the excellence of a raw material that is as exceptional as it is scarce: the squid from the bay of Llastres.
To prepare it, simply poach some onion with extra virgin olive oil over a very low heat.
Then add the squid, cut into pieces that are not too small, cover the mixture and leave to cook over a low heat.
The skewer can be decorated with a few drops of natural tomato confit on a corn tortoise.
